Apple Cider Vinegar has been used in folk medicine for centuries to treat many common ailments. Apple cider vinegar is an appetite suppressant and aids in weight loss; it has been suggested that apple cider vinegar’s benefits are a result of increased water retention, due to the action of pectin, a water-soluble fiber. The retention of water in the stomach produces a feeling of satiety (thus suppressing the craving for food) and promoting beneficial bowel function.
Researchers have shown that Apple Cider Vinegar supplement; lowered glucose and insulin responses and increased satiety. In a study by Ostman et al., 12 healthy volunteers were administered a dosage of 18, 23, and 28 mmol of acetic acid corresponding to 18, 23, and 28 mg of vinegar with white wheat bread once every week for a duration of 4 weeks. Glycaemic and insulinaemic responses, and subjective satiety ratings were recorded for reference and treatment. Results showed that “when vinegar was served with the white wheat bread, the glycaemic responses were significantly lower at 30 min postprandially (P<0.05) compared with the reference meal without vinegar” and “ the highest level of vinegar significantly lowered the blood glucose response at 30 and 45 min, the insulin response at 15 and 30 min as well as increased the satiety score at 30, 90, and 120 min postprandially”.(1) Vinegar reduced the GI (glycaemic index) of white wheat bread and increased the postmeal satiety with prolonged duration. The satiety feeling may contribute to suppress appetite.
